STEAK TARTARE AT BOUCHERIE ROULIÈRE.
Included for variety and because once the racing season begins, we tend to start thinking about the Tour de France very early. Then we mentally move to Paris— and, pretty quickly, to food. When we f irst started peloton, Bill and Anne Disselhorst began Fiore Market Café next door and they fed and nourished us through the roller-coaster years of starting a company.
